Introduction and implementation of HACCP requirements in small wineries

On April 25, 2024, members of the Women in Wine Industry Association (WIWI) participated in a training session on “Introduction and Implementation of HACCP Requirements in Small Wineries.” The session was organized with the support of the Food and Agriculture Organization of the United Nations (FAO).

The training was led by Tamar Otkhmezuri, FAO representative, and focused on key topics including:

Compliance with food safety standards in wine production

Hygiene practices and sanitation

Proper processing of oenological materials

Quality control systems in the wine industry

Step-by-step implementation of the HACCP (Hazard Analysis and Critical Control Points) framework
